Paul Riedman C.E.C. Certified Executive Chef Stonebridge Golf Links and Country Club 2000 Raynors Way, Smithtown NY 11787 Started professional career in 1996 at the Harrison House, in Glen Cove NY. Started in garde manager, and worked my up to Sous Chef by 1997. Worked under Executive Chef Paul Thompson and Chef Roland Iadanzia. In 2000 left Harrison to work for chef Jeanine DiMenna, in her 100 seat restaurant, Page One. In 2001, I was introduced to Richard Allen, formerly Executive Chef at The Garden City Hotel, and American Hotel in Sag Harbor. Richard was doing off site catering, and I worked for Richard Allen and Company till 2003. On my off days I would work at the Sands Point Village Club with Chef Nick Fulgeri. I enjoyed working in the country club environment, and found Stonebridge in the fall of 2003. I became Executive chef in June of 2004. In March of 2007 I finished the requirements set by the American Culinary Federation, and became a Certified Executive Chef. I am an active member in the Long Island Chapter of ACF, and the Westchester Club Chefs Association. I have published articles for “Club Management”, “Club and Resort Business”, "Chef-Best", and "The Club Professional" magazine. Stonebridge has won Culinary awards at the "Evening of Good Taste", and has been recognized by "Long Island Business News" top twenty destinations for golf outings and corporate events on Long Island. What is a Certified Executive Chef? * Must complete a written and practical exam. Must be re-tested every five years * Completed course work in Nutrition, Food Safety and Supervisory Management * Verify all past work and educational experience * Recognized national certification and skills established through The American Culinary Federation * 8,000 professional chefs are certified worldwide. 19,000 members through 240 national chapters * World Association of Chefs Society member since 2000, 8 million members globally.
