Growing up in an Italian family, Charlie was raised cooking in his grandma’s kitchen. Every Sunday morning they would cook together for the big family dinner.  His inspiration for fresh and local ingredients stems from his grandma cooking with the freshest produce straight from the garden; tomatoes, herbs, onions, fruit – you name it she grew it.  Together they would make fresh pasta sauce, bread and homemade wine. After high school, Charlie enrolled himself into the Culinary Institute of America.  His first culinary job was on a private yacht, “Bravo Papa” traveling from Brazil to Nova Scotia, cooking for passengers of the yacht. From there Charlie moved out to Long Island to land an executive chef position at the Club House Restaurant in Huntington. He is still with the restaurant and has been for 16 years.
