Executive Chef Dustin Palmisano comes from a family of New Orleans entrepreneurs. His father and mother own their own businesses and equipped Dustin with the business skills needed to be a successful restaurateur. Dustin grew up cooking with his father on weekend camping trips. His love for baking came from baking cakes for special occasions with his mother. At age 10, he assisted his father cooking home cooked meals at Azalea´s Bingo Catering Hall. These experiences set the journey for his passion for food and the desire to open his own restaurant.
He began working for a bakery at 17 years old to save money to go to culinary school. Dustin enrolled at Sclafani cooking school, Inc to accelerate his knowledge and kills to pursue his culinary path. Upon graduation, he became the kitchen manager for Bears Grill and Spirit in Mandeville, LA. From there, he worked for fine dining restaurants and large hotels.
At age 23, he achieved his first executive chef and general manager position at The Original Coffee Pot Restaurant, established in 1894 in the heart of the French Quarter, known for its famous Cales Cakes. Chef Dustin continues to introduce innovative menu using fresh Louisiana Seafood to create his dishes. He gets his inspiration for his family’s influence of Southern Italian Cuisines and a blend of many other cuisines of New Orleans that are truly unique and memorable such as Chef Dustin’s Fleur de Lis chicken and Vieux Carre´s Filet.
