Lenny Campanelli's first introduction to cooking was watching his mother and grandmother in the kitchen getting ready for Big Sunday dinners. He always enjoyed cooking and eating but not until after being in the work force for some time did he decide to change his career goals and turn his passion for food into a way of life. He decided before it was too late he would attend culinary school and learn the professional techniques he would need to further himself in his culinary pursuits. After Culinary School he was fortunate to land an internship at Coolfish, a famous Long Island seafood restaurant under Executive Chef and Owner Tom Schaudel. Here Lenny was able to absorb a tremendous amount of knowledge about acquiring fresh local seasonal products and creating seasonal menus. After his internship he worked at another popular upscale restaurant specializing in upscale seafood. Fiddleheads in the heart of historic Oyster Bay, working his way up in the kitchen he always kept in touch with Tom his mentor and owner of Coolfish. Years later Tom offered Lenny the Sous Chef position at Coolfish and he leaped at the chance after years of hard work he is now the Chef de Cuisine at Coolfish and loves it.... To be Continued....
