Chef Lanza began his career in the culinary arts field as a young man growing up in the restaurant environment where he found his passion for cooking. During his junior year in high school, he enrolled in the Culinary Arts program at Eastern Suffolk BOCES where his formal education began. After completing two years in the vocational program, young Lanza enrolled at the prestigious Culinary Institute of American in Hyde Park, New York. After graduation from CIA in 1986, he continued to work on Long Island at local restaurants perfecting his skills at places like The Albatross on Fire Island, The Pier at Watch Hill which was like a restaurant resort and Montauk Downs Gold Club where he continued to really refine and hone his craft. He then made his way to the Florida coast where he continued to work with indigenous ingredients. The Omni Hotel in West Palm Beach was a high-volume private club and catering facility. Soon after showing himself as being innovative with great vision, he was promoted to Sous Chef in ’89. He landed his first Executive Chef position at the beautiful, private La Cita Country Club & Resort in Titusville, Florida only two short years later; another very large, high-volume with fine dining menus. Chef Lanza has a keen ability to read his community’s palate and define what they favor with his creative and delicious cuisine. He is a master in creating innovative dishes that marry flavors in unique and unexpected ways. His use of legumes, fresh greens with limitless local herbs and seafood allows him to create unique dishes that evoke flavors you keep coming back for. His use of seafood from appetizers to entrees creates the flavors of old-world comfort food while infusing nouvelle cooking. Rich began turning his sites on working with new restaurant owners as well as owner’s that were falling back in the industry. He acted as Chef Consultant and assisted in revamping these place; bringing them back to success and profitability. Dockside Restaurant in Port Jefferson was transformed into a high-volume destination restaurant that was very successful after his intervention. He then consulted with the new owner of Trumpets on the Bay in Eastport, New York where he became the opening Executive Chef for over 7 years where he regularly received high ratings from Zagat, Newsday and The New York Times. The restaurant was so successful under his guidance that they opened Trumpets at the Gate; a catering hall for various functions at this beautiful location on the bay. Next on the agenda, Chef Lanza won the Hamptons Platinum Chef in summer 2006 while collaborating at the Tom Schaudel Restaurant “Passion Fish”. Chef Lanza became the Executive Chef at the storied De Seversky Center at the New York Institute of Technology in Old Westbury where he regularly held special Epicurean events. Another famous location was Nico at the Gatsby Mansion in Islip where he revamped the entire menu and dining area to an American style restaurant with an Italian flair This restaurant was voted most romantic on Long island by Newsday and The New York Times.
