Dylan Jones started his career in Australia before moving to London in search of a position at Nahm.  During his five years under both Chef David Thompson and Chef Matthew Albert’s close supervision, Dylan was introduced to many new ingredients, flavors’, cooking techniques and traditions savoring every moment.  It was at Nahm that Dylan truly fell in love with Thai cuisine and culture and whenever given the opportunity travelled to Thailand to explore and taste and secrets it had to offer.  He has since relocated himself to Bangkok and has started the arduous task of learning the language so he can unlock many more secrets of Thai food kept within the pages of ancient Thai texts.  You can currently find him at Bolan in Bangkok, TH.
