Gerard graduated from the Culinary Institute of America with an A.O.S. in Baking & Pastry Arts in 1994. After graduation he trained in Leysin, Switzerland for several months, then returned to Manhattan and worked in various fine dining restaurants. His positions included Pastry Chef at Windows of the World, Regional Executive Pastry Chef for Sodexo / Wood Dining Services, and Assistant Pastry Chef at The “21” Club.
In 2002 he started his teaching career at The Arts Institute of New York City where he taught pastry for 4 ½ years. His current position is as Culinary Director/ Facility Director of the Viking Culinary Center in Garden City which is owned and Operated by Carl Schaedel & Co. Inc. While running the facility in Garden City is Gerard ‘s main focus, he continues to train future Chefs as an Adjunct Professor at Monroe College in New Rochelle NY.
In March of 2002 Gerard received his certification from the American Culinary Federation while being a member of the New York Culinary Team and is currently the President and the Competition Chairperson of for the ACF Long Island Chapter. Chef Molloy is an award winning competitor on the national and international level.
