Hello my name is Jaclyn L. Messina, I am the Executive Baker at Bare Naked Bakery & Cafe in Bellmore, NY. We are Long Island's 1st 100% dedicated GLUTEN FREE bakery/cafe. I grew up in Baldwin, NY. After graduating Baldwin High School I attended The Culinary Institute of America (CIA) where I studied Baking and Pastry Arts. I graduated from CIA in 2007 with an AOS in Baking and Pastry Arts. From there I moved to New Jersey where I started an at home cookie business (Jaclyn's Cookies) and became the Executive Pastry Chef at Dune Restaurant (Ventnor, NJ). In the fall of 2009 I moved back to NY continuing my cookie business from home until being diagnosed with Celiac Disease that January. Only knowing the basics of gluten free baking I had a lot to learn. About 7 months later my brother discovered Bare Naked Bakery on his way to work. Being that Bare Naked Bakery is 100% gluten free and caters specifically to people with celiac, when he told me I was ecstatic. From that day on I began to keep in constant contact with owner, Bridget Brennan, and was soon hired. With a lot of hard work and devotion I soon advanced to become their Executive Baker. Bare Naked Bakery was an answer to my prayers and the prayers of many others going through the same lifestyle change.
