Executive Chef James Carpenter decided early on to pursue a career in fine dining. His first kitchen job at the 5-star restaurant Harrold’s in Stormville, NY began at age 16 and he has enjoyed the culinary spotlight ever since. After a tour of duty in the US Navy, he entered the advanced culinary program at Johnson and Wales University in South Carolina and graduated with honors in 1992. Chef James then worked with some of the top chef’s in the southern United States including Louis Osteen, chef at Louis’ Charleston Grill and renowned Michelin starred Chef Gunther Seeger at The Dining Room at the Ritz-Carlton Buckhead in Atlanta, Ga. He also cooked with Susan Spicer at Bayone and was the executive chef at Café Sbisa in the French Quarter of New Orleans, Louisiana. It was during this time that James developed his passion for utilizing the finest seasonal ingredients and a commitment to the highest standards of quality. Chef James then returned to NY and was instrumental in the opening of Savanna’s in Southampton serving as sous chef for the restaurants first two seasons and helping them garner the highest food rating of three stars from the NY Times. He joined Della Femina in 1997 as Chef de cuisine and in 1999 was promoted to Executive Chef. It was at Della Femina that James developed a huge following of local Hampton celebrities such as Billy Joel, Martha Stewart, Betsey Johnson and Howard Stern. He was chosen to do several events with the prestigious James Beard house and again received the highest food rating in the NY Times. In 2003 Zagats also honored him with a “Close to perfect” 25 food rating and “the sexiest food in the Hamptons.” In 2007 James took over as Executive Chef of the historic and award winning American Hotel in Sag Harbor. Here James was an integral part of the Slow Foods East End chapter where he helped champion the use of local food producers from farmer’s markets, seafood shops and farm stands. James passionately believes that by utilizing the freshest and best-tasting foods in season you create the highest quality while also helping to preserve the natural rural beauty of the East End of Long Island.
