Most would describe John Harkness as the “Home town kid” from Edison, New Jersey. Born at Edison’s J.F.K. Hospital and graduating from each of Edison’s public schools, John Harkness has served his area well. During his attendance of J. P. Stevens High School, Chef Harkness first experienced his rapidly growing union with the food industry. While attending J.P. Stevens High School, John was a star football player who started both Center and Nose Guard for his Senior team with Honorable Mentions in Middlesex County. While attending high school Chef Harkness tenured at: Burger King in (old) Menlo Park Mall, Rackley’s in Piscataway, Park Ave. Caterers and finally The Clarion of Edison. A young John C. Harkness was trained in the Hilton of Woodbridge and the prestigious Embassy Suites of Piscataway for job experience at nineteen-years-old and The Days Inn Hotel of New Brunswick. Along the way John worked as Head Chef for Dinardo’s Italian Restaurant of Piscataway (originally of Edison.) Chef John C. Harkness mastered culinary techniques and popular gastronomic styles at the Culinary Institute of America, after which he combined and discovered new fusions of exotic cuisines. His work upon graduation was beside renowned Francaise Falsunelli of Maximme’s (France)/ New York and James Beard Winner Greg Aluzen of Aureole (Charlie Palmer)/Eleven of Pitsburg. After Leaving Café Abbracci Chef Harkness switched gears and went back to school; he applied and was excepted for the fifth Bachelors program to go through the Culinary Institute of America. During his bachelors program John Harkness was recognized by his peers and was asked to be their Head Chef at a California Vintners dinner catering to some of the top wine makers and vineyard owners in the world. Upon returning from California, John was again asked to lead an Entrepreneur class’ Children’s Carnival Brunch (that turned out to be a ground breaking event for the school.) After completing the Bachelors degree program at the Culinary Institute of America. John Spent a short time at Café Abbraci and then moved back into education and received a Family and Consumer Science degree from Montclair State U. and became only the second male in the state to have such a degree. After completing his certification program John was contacted by his Supervisor at Montclair and was told that Holmdel High School was recruiting him to be their Culinary Arts Instructor. John has been there for the past Ten years were he has been heavily involved in community relations acting as a Class Advisor, Football Coach, Culinary Arts Club Advisor, and Mentor to many aspiring Culinary Institute of America students. Some that have moved on to highly respected restaurant through out the State and Country. Also During his time at Holmdel High School John had been consulting for some of the areas best eateries Zebu Forno of Red Bank Scarborough Fair, Seagirt, NJ Buttonwood Manor, Monmouth County, NJ Tommy’s Italian Sausages of Elizabeth/North Brunswick Sweet Station, Ramsey, NJ Lana’s at Hyatt Hill Golf Course, Clark, NJ Aglio of Metuchen (Owner 2007-2008) During his Culinary Extravaganzas. Chef Harkness managed to marry his wife Lynn Gialluisi in 1998 of Staten Island and today they have three beautiful children (Caitlyn 9, Alexandra 8 and Luke 3.). They currently live in the Saint Francaise Section of Metuchen.
