My name is Manuel Antonio Berroterán, I was born in El Salvador, Central America. Even as a child I began to appreciate and enjoy the culinary arts. I practiced on an equal footing with my grandmothers and my mother, but for them it was a career that would not meet my needs in life without further studies. I studied part of my high school in Meza, Arizona. Then in the 90s I went on to study at Jacksonville University in Florida, but my true calling was the culinary arts so I decided to work on a cruise ship and this is where I began to enhance my culinary education. After much effort and sacrifice I realize I needed to formalize my culinary education so I enrolled at the Culinary Institute of America (CIA) where I graduated at the head of my class. I also have a Bachelor Degree in Economics from the University of Utah, which I obtained in August 2003. My work experience includes both restaurants and hotels: Bellagio, Westin Hotels, Sky Bar, Eurest Dining Services, Grand America Hotel (SLC), Red Lion Hotel, West Coast Hotel Casa Santo Domingo (Guatemala) and Tre Fratelli International, which is a small Italian cuisine franchise, which has restaurants in Central America, United States and Europe. In my current role as a Corporate Executive Chef at Tre Fratelli my responsibilities include; engineering the menu, managing the appearance and taste of each dish and standardization/development of revenue for each of our restaurants. This franchise that was born and developed fifteen years ago, in San Francisco, California and I have been with them for 5 and have enjoyed every minute. Sincerely, Manuel Antonio Berroterán
