I have been working in the culinary field since the age of 13, standing on a milk crate making pizza in a deli. When I was able to drive I got my first job in a French restaurant, this is where I really started to understand food and my passion for it. I was young but I still knew this was my destiny. The chef saw my interest in this and took me under his wing. On nights when I was done with all my prep he would let me stand in the corner of the line and watch, showing and explaining everything he did. When it was time for me to graduate high school he told me the only place I should go was the Culinary Institute of America (CIA), if I still wanted to work there otherwise I would be fired, so that's what I did. The CIA was a great school; it got me ready for the real world by giving me the building blocks I needed. It taught me how to challenge myself and gave me the competiveness I needed. After graduation, I went to work in the corporate dinning sector. This was a great experience not only did I get to hone my skills as a chef but I got to work in private dining where I was exposed to a lot of high end products, It was like a chefs play ground. When I was not in private dining I was opening new businesses for the company. This was lots of stressful work, stressful in a good way. It was very gratifying to see the finished product and all your hard work coming together. At this same time I also worked with a private caterer. I first started with him because he needed help with a party. I loved it so much I would work almost every weekend. I got to travel all over Long Island, NY doing private events at some of the most amazing places. It was more of an adventure to me then work, lots of small very elite party's for the who's who of the Hampton’s. Then one day I was on the phone with my old sous chef and somehow we decided to open a restaurant of our own, Sentrista Grill. Within 3 fast months it all came together, it has now been 3 great years and loving every minute of it!
