5 Spice Tuna with a Citrus Soy Glaze

Tuna rubbed with Chef Colin's 5 Spice and seared off then dressed in Chef Colin's Citrus Soy Glaze and seared off again until fish is "black and blued". A light and refreshing fish dish.

    1. Liberally sprinkle 5 Spice Rub on each side of tuna steaks
    2. Let tuna sit for about 15 minutes, tuna will start to darken in color
    3. Liberally rub oil all over tuna steaks
    4. In a hot saute pan, sear tuna, pushing down to ensure it's flat on surface to cook evenly
    5. sear on side until fish loosens and you can flip it, sear on each side
    6. Remove tuna from pan and place in a bowl
    7. Pour enough Citrus Soy Glaze over tuna that each side is dressed well, this will stop the tuna from cooking
    8. Heat a clean saute pan and add tuna steaks back into pan
    9. sear very quickly, about 15 seconds on each side
    10. Remove from pan, slice tuna and plate
    11. Drizzle with more Citrus Soy Glaze and garnish with Pickled Ginger
