Buttermilk Blueberry Pancakes

Description
The highlight of any breakfast are these fabulous fresh blueberry pancakes. Serve with my blueberry sauce (see recipe for sauce).
Ingredients
- 2 Cup(s) Flour, All-Purpose
- 1/4 Cup(s) Sugar
- ½ Tea Spoon(s) Baking Soda
- ½ Tea Spoon(s) Baking Powder
- ½ Tea Spoon(s) Salt
- 2 Each Eggs, beaten
- 1/4 Cup(s) Unsalted Butter, melted
- ½ Tea Spoon(s) Vanilla Extract
- 1 Cup(s) Fresh Blueberries
- 2 Cup(s) Buttermilk
- 2 Table Spoon(s) Butter (for greasing griddle)
- As Needed Blueberry Syrup
Directions
- On medium heat, heat double burner griddle over stove (if you do not have a griddle, a nonstick pan is fine)
- In a bowl, mix together dry ingredients
- Add melted butter, eggs and vanilla to dry ingredients
- Slowly whisk in the buttermilk
- whisk ingredients together, batter should still have lumps
- When griddle is hot, rub with butter
- Using a ladle pour the batter onto the hot griddle one at a time while spreading batter in a circular motion to form pancake
- Cook for 1 minute and then scatter some blueberries on each pancake, flip when brown on bottom side
