Description

The highlight of any breakfast are these fabulous fresh blueberry pancakes. Serve with my blueberry sauce (see recipe for sauce).


Ingredients

  • 2  Cup(s) Flour, All-Purpose
  • 1
  • 1/4  Cup(s) Sugar
  • 2
  • ½  Tea Spoon(s) Baking Soda
  • 3
  • ½  Tea Spoon(s) Baking Powder
  • 4
  • ½  Tea Spoon(s) Salt
  • 5
  • 2  Each Eggs, beaten
  • 6
  • 1/4  Cup(s) Unsalted Butter, melted
  • 7
  • ½  Tea Spoon(s) Vanilla Extract
  • 8
  • 1  Cup(s) Fresh Blueberries
  • 9
  • 2  Cup(s) Buttermilk
  • 10
  • 2  Table Spoon(s) Butter (for greasing griddle)

  •  As Needed Blueberry Syrup

Directions

    1. On medium heat, heat double burner griddle over stove (if you do not have a griddle, a nonstick pan is fine)
    2. In a bowl, mix together dry ingredients
    3. Add melted butter, eggs and vanilla to dry ingredients
    4. Slowly whisk in the buttermilk
    5. whisk ingredients together, batter should still have lumps
    6. When griddle is hot, rub with butter
    7. Using a ladle pour the batter onto the hot griddle one at a time while spreading batter in a circular motion to form pancake
    8. Cook for 1 minute and then scatter some blueberries on each pancake, flip when brown on bottom side
    9. Serve hot with Blueberry Syrup (See Recipe on IdealChef.com)
