Description

This is a delicious classic Italian stew like dish with chicken, fresh bell peppers, mushrooms and tomatoes.


Ingredients

  • 4  Each Whole Chicken Legs, cut in two
  • 1
  • 1/4  Cup(s) Extra Virgin Olive Oil
  • 2
  • 5  Each Garlic Cloves, sliced
  • 3
  • 1  Each Onion, sliced
  • 4
  • 3  Cup(s) Button Mushrooms, sliced
  • 5
  • 5  Each Bell Peppers, sliced
  • 6
  • 5  Cup(s) Pomodoro Sauce
  • 7
  • 1  Cup(s) Sherry Wine
  • 8
  •  As Needed Fresh Italian Parsley, finely chopped
  • 9
  •  As Needed Fresh Basil, chiffonade
  • 10
  •  Pinch Red Pepper Flakes
  • 11
  •  To Taste Salt & Pepper

Directions

    1. Season chicken with salt and pepper
    2. Add oil to a large pot on medium high heat
    3. Add chicken to pot and sear on all sides until golden brown
    4. Add onions, peppers and mushrooms
    5. Season with salt, pepper and red pepper flakes
    6. Stir to combine
    7. Cook for about 8 - 10 minutes
    8. Deglaze pot with sherry wine
    9. Cook for another minute and add Pomodoro sauce
    10. Cook down for 15 minutes
    11. Taste and Season with salt and pepper if necessary
    12. Add basil and parsley
    13. Serve and enjoy!
