Directions
- Pre-heat oven to 350 F.
- Grease two 9 inch round baking pans.
- Combine dry ingredients in a large bowl.
- Add eggs, milk, oil and vanilla and beat on medium speed for 2 minutes.
- Stir in boiling water. Please note the batter will be thin.
- Fill cupcake paper cups 2/3 with batter.
- Bake for 22 tol 25 minutes or until wooden pick inserted into the middle come out clean.
- Cool for 10 minutes and frost.
- Makes about 24 cupcakes.
