Description
A flavorful poaching liquid use traditionally for seafood or vegetables. The main components are vegetables, aromatic herbs, and an acid such as vinegar or lemon juice.
Ingredients
- 1 Quart(s) Water
- 1 Cup(s) White Wine
- ¼ Cup(s) Onion, chopped
- ¼ Cup(s) Celery, chopped
- ¼ Cup(s) Leek Tops, chopped
- 4 Each Thyme Sprigs
- 8 Each Parsley Stems
- ½ Tea Spoon(s) Kosher Salt
- 5 Each Black Pepper Corns
- 1 Table Spoon(s) White Vinegar
Directions
- Place all ingredients in to a pot and allow to simmer for 25 minutes
- Strain and use for poaching or chill and use a different day
