Crawfish Pasta

Description
Sauteed mushrooms and crawfish are tossed together in a light tomato cream sauce then penne pasta is added to finish the dish off.
Ingredients
- 2 Table Spoon(s) Olive Oil
- 1 1/2 Cup(s) Cremini, Button, Oyster Mushrooms, sliced
- As Needed Salt & Pepper
- As Needed Creole Seasoning
- 1 Cup(s) Crawfish Tail Meat
- 3/4 Cup(s) Tomatoes, diced
- 1/4 Cup(s) Red Onion, finely chopped
- 1 Table Spoon(s) Garlic, minced
- 1/2 Cup(s) Brandy
- 1 Cup(s) Heavy Cream
- 2 Table Spoon(s) Marinara Sauce
- 1 ½ Table Spoon(s) Scallions, chopped
- 1/4 Pound(s) Penne Pasta, cooked al dente
- 1 Table Spoon(s) Parmesan Cheese
