Watch Chef Scott Schneider prepare fluke in a unique and very tasty way. Chef Schneider shows you how to use Carta Fata paper, which makes it possible to cook healthier as the food is cooked in its own juices with no loss of moisture. This is a great recipe and you can replace the fluke with salmon or bronzini.


  • 5  Ounce(s) Weight Fluke

  • 3  Each Lemon Slices
  • 2
  • 1  Table Spoon(s) Calamata Olives
  • 3
  • 1  Table Spoon(s) Pignoli Nuts
  • 4
  • 2  Tea Spoon(s) Butter
  • 5
  •  To Taste Salt
  • 6
  •  To Taste Pepper
  • 7
  • 1  Each Fresh Thyme Sprig
  • 8
  • 1/2  Cup(s) Water
  • 9


    1. Preheat oven to 350 degrees F
    2. Lay lemon slices on top of the paper
    3. Place the fluke on top of the lemon slices
    4. Place olives, pignoli nuts, butter and thyme on top of fish
    5. Season with salt and pepper
    6. Bring the corners of the Carta Fata paper together and tie
    7. Place the fish on baking pan
    8. Pour water on pan
    9. Bake for 10 to 15 min
    10. The water should have evaporated when you take the pan out of the oven
    11. The fish should be white and flaky
    12. Serve to guests in the paper and enjoy!

Easy, good and healthy

This was so good. Great idea and fun to serve this in such a clever way.
