Description

Watch Chef Tivy and learn how to make a traditional French onion soup. This classic soup recipe is a combination of rich broth and sweet caramelized onions, topped with croutons and melted cheese. Comfort food at it's best!


Ingredients

  • 2  Each Spanish Onion, sliced
  • 1
  •  As Needed Olive Oil
  • 2
  • 1  Cup(s) Red Wine
  • 3
  • 1  Quart(s) Stock (low sodium veal, chicken or beef broth)
  • 4
  •  To Taste Pepper, fresh ground
  • 5
  •  To Taste Salt
  • 6
  • 2  Tea Spoon(s) Sugar
  • 7
  • 2  Table Spoon(s) Brandy or Sherry
  • 8
  • 2  Each Gruyere, slices
  • 9
  • 2  Each Croutons
  • 10

Directions

    1. Heat olive oil in skillet on medium heat
    2. Add a layer of onions
    3. Do not stir until onions have sweated out for 10 to 15 minutes
    4. Stir and add more oil if needed
    5. Cook onions another 10 to 15 minutes, or until golden brown
    6. Season with salt
    7. Add red wine to the caramelized onions
    8. Simmer and reduce wine by half
    9. Add stock and Simmer for 10 to 15 minutes
    10. Season with salt and pepper
    11. Add a splash of sherry or cognac
    12. Ladle soup into four oven-safe bowls
    13. Place croutons and Gruyere cheese on top of the soup in each bowl
    14. Put under a broiler for 2 to 4 minutes or just until cheese is melted
    15. Serve and enjoy
