Each Spanish Onion, sliced

Quart(s) Stock (low sodium veal, chicken or beef broth)

Directions
- Heat olive oil in skillet on medium heat
- Add a layer of onions
- Do not stir until onions have sweated out for 10 to 15 minutes
- Stir and add more oil if needed
- Cook onions another 10 to 15 minutes, or until golden brown
- Season with salt
- Add red wine to the caramelized onions
- Simmer and reduce wine by half
- Add stock and Simmer for 10 to 15 minutes
- Season with salt and pepper
- Add a splash of sherry or cognac
- Ladle soup into four oven-safe bowls
- Place croutons and Gruyere cheese on top of the soup in each bowl
- Put under a broiler for 2 to 4 minutes or just until cheese is melted
- Serve and enjoy
