Description

This is a great New Orleans style frogs legs recipes. Chef Greg takes these Frog legs sears them and quickly braises them in a tomato broth.


Ingredients

  • 4  Each Frog Legs
  • 1
  • 2  Table Spoon(s) Olive Oil
  • 2
  • 2  Table Spoon(s) Shallots, minced
  • 3
  • 1  Table Spoon(s) Garlic, minced
  • 4
  • 1  Cup(s) Tomatoes, diced
  • 5
  •  To Taste Salt & Pepper
  • 6
  • 1  Tea Spoon(s) Herbs de Provence Seasoning
  • 7
  • 2  Fluid ounce(s) White Wine
  • 8
  • 1  Fluid ounce(s) Shrimp or Fish Stock
  • 9

Directions

    1. Season frog legs with salt and pepper
    2. Heat olive oil in a pan on medium high heat
    3. Add frog legs to pan and sear on each side for about 2 minutes, until golden brown
    4. Remove frog legs from pan and place on a wire rack to remove excess oil
    5. Lower heat and add shallots to pan
    6. Saute until soft
    7. Add garlic and let cook quickly
    8. Add tomatoes and Saute until cooked down a bit
    9. Season with salt, pepper and herbs de provence
    10. Deglaze pan with white wine
    11. Toss to incorporate and let cook down
    12. Place frog legs back into pan
    13. Add stock
    14. Taste and Season if necessary
    15. Let simmer for 5 - 7 minutes longer until legs are cooked through
