Frog Legs a la Provencal

Description
This is a great New Orleans style frogs legs recipes. Chef Greg takes these Frog legs sears them and quickly braises them in a tomato broth.
Ingredients
- 4 Each Frog Legs
- 2 Table Spoon(s) Olive Oil
- 2 Table Spoon(s) Shallots, minced
- 1 Table Spoon(s) Garlic, minced
- 1 Cup(s) Tomatoes, diced
- To Taste Salt & Pepper
- 1 Tea Spoon(s) Herbs de Provence Seasoning
- 2 Fluid ounce(s) White Wine
- 1 Fluid ounce(s) Shrimp or Fish Stock
Directions
- Season frog legs with salt and pepper
- Heat olive oil in a pan on medium high heat
- Add frog legs to pan and sear on each side for about 2 minutes, until golden brown
- Remove frog legs from pan and place on a wire rack to remove excess oil
- Lower heat and add shallots to pan
- Saute until soft
- Add garlic and let cook quickly
- Add tomatoes and Saute until cooked down a bit
- Season with salt, pepper and herbs de provence
- Deglaze pan with white wine
- Toss to incorporate and let cook down
- Place frog legs back into pan
- Add stock
- Taste and Season if necessary
- Let simmer for 5 - 7 minutes longer until legs are cooked through
