Description

This chicken giardiniera recipe is a light and healthy. Grilled chicken with a beautiful salad loaded with flavors.


Ingredients

  • 2  Each 6 Oz. Chicken Breast, pounded thin
  • 1
  • 1  Table Spoon(s) Olive Oil
  • 2
  •  Pinch Salt and Pepper
  • 3
  • ½  Each Lemon
  • 4
  • 1  Tea Spoon(s) Garlic
  • 5
  • 1  Cup(s)  Baby Arugula
  • 6
  • ½  Each Tomato, sliced into wedges
  • 7
  • 1  Each Red Onion, thinly sliced
  • 8
  • 3  Each Belgium Endive Leaves
  • 9
  •  As Needed Parmesan Cheese (for garnish)

Directions

    1. Marinate chicken in olive oil, salt, pepper, garlic and lemon juice for 5 minutes
    2. Grill chicken smooth side down for 5 to 10 minutes or until done.
    3. Plate chicken breasts on Belgium endive leaves
    4. In a mixing bowl, toss arugula,tomatoes and red onion with dressing
    5. Place salad on top of plated chicken and garnish with parmesan cheese

    Salad Dressing

    Ingredients

  • 1 Table Spoon(s) Olive Oil
  • ½ Table Spoon(s) Balsamic Vinegar
  • To Taste Salt & Pepper
  • ½ Tea Spoon(s) Sugar
  • ½ Tea Spoon(s) Parsley, dried
  • ½ Tea Spoon(s) Shallot, minced
  • Directions

    1. Combine olive oil,  balsamic vinegar, sugar, salt, pepper, parsley and shallot
