Description
A beautiful and delicious garnish for your next dessert or pastry cake. In this video, Chef Gerard uses lemon and orange but you can use any citrus you desire, even grapefruit or lime.

Directions
- Cut ends off of lemon and orange
- Slice down skins of fruit
- Remove rind from peels
- Slice peels into desired equal size
- Place into a sauce pot
- Add 1 cup of water and 1 cup of sugar
- Bring to a boil over medium high heat
- Stir
- Strain water and reserve water (water will now be a simple syrup)
- Repeat this process two more times
- Store peels in reserved simple syrup in an air tight container
- Once you're ready to use peels, place on a paper towel and pat dry
- Place peels in a bowl with the extra cup of sugar and toss to coat
