Directions
- Boil potatoes until fork tender then cut into very small pieces
- Steam the mixed vegetables
- Squeeze the vegetables to remove excess water then pat dry
- mix all ingredients together (if the mixture looks wet, add more potatoes)
- Shape mixture into flat round patties about 1/2" thick
- Dip each patty in flour
- Heat oil in a pan on medium high heat
- Fry a few cutlets at a time until they are golden-brown on both sides
- Serve with Mango Raita
