Description

Mixed vegetables cooked with Indian spices and lightly fried as cutlets or patties. The cutlets are served with mango raita


Ingredients

  • 1/3  Cup(s) Green Peas, chopped
  • 1
  • 1/3  Cup(s) Turnips, chopped
  • 2
  • 1/3  Cup(s) Potatoes
  • 3
  • 1/3  Cup(s) Carrots, chopped
  • 4
  • 1/3  Cup(s) Mushrooms, chopped
  • 5
  • 1  Table Spoon(s) Mustard Oil
  • 6
  • 1  Tea Spoon(s) Cumin Seeds
  • 7
  • 1  Tea Spoon(s) Mustard Seeds
  • 8
  • ¼  Tea Spoon(s) Turmeric Powder
  • 9
  •  To Taste Salt
  • 10
  •  As Needed All Purpose Flour
  • 11
  •  As Needed Vegetable Oil (for frying)

Directions

    1. Boil potatoes until fork tender then cut into very small pieces
    2. Steam the mixed vegetables
    3. Squeeze the vegetables to remove excess water then pat dry
    4. mix all ingredients together (if the mixture looks wet, add more potatoes)
    5. Shape mixture into flat round patties about 1/2" thick
    6. Dip each patty in flour
    7. Heat oil in a pan on medium high heat
    8. Fry a few cutlets at a time until they are golden-brown on both sides
    9. Serve with Mango Raita

    Mango Raita

    Ingredients

  • 1 Cup(s) Semi-Ripe Dessert Mango, cubed
  • 1/2 Cup(s) Yogurt, plain
  • 1 Pinch Cumin Power
  • 1 Pinch Salt
  • Directions

    1. Add all ingredients together and mix
