Description

Irish Soda Bread isn't only for St. Patrick's Day. Try Chef Gerard's Grandma's famous recipe, you can even make scones out of this recipe.


Ingredients

  • 10  Ounce(s) Weight All Purpose Flour
  • 1
  • 3 3/4  Ounce(s) Weight Whole Wheat Flour
  • 2
  • 1  Ounce(s) Weight Sugar
  • 3
  • 1  Pinch Salt
  • 4
  • 1  Ounce(s) Weight Baking Powder
  • 5
  • 2 1/2  Ounce(s) Weight Butter, cold, diced
  • 6
  • 1  Each Egg
  • 7
  • 1  Cup(s) Buttermilk
  • 8
  • 1/3  Cup(s) Black & Golden Raisins
  • 9
  • 1/2  Cup(s) Milk
  • 10

Directions

    1. Preheat oven to 350 degrees
    2. Sift together all dry ingredients
    3. Using a pastry blender, cut in the butter
    4. The butter should be about the size of half a pea when done
    5. Make a well in the center of the mixture
    6. Add egg and buttermilk to center
    7. Using a rubber spatula, combine the egg and buttermilk together
    8. Slowly start to incorporate the outside edges into the center
    9. Add the rest of the buttermilk and mix
    10. Add raisins and combine
    11. Place dough on a parchment covered sheet pan
    12. Using a knife, make a cross on the top
    13. Brush top of dough with milk
    14. Sprinkle sugar on top
    15. Bake in oven for 35 to 45 minutes
    16. Remove from oven, once bottom is golden brown it's done
    17. Let cool completely before slicing
