Everybody loves miso soup. It can be made with vegetarian or not. miso Soup is a must have dish with other Japanese meals. Healthy and comfort Japanese miso Soup is a perfect meal as a wake up drink every morning, a side dish for your lunch salad, a warming dish on a chilly day, a late night light food!

Cup(s) Silken Tofu, cut into small cubes

Table Spoon(s) Saikyo Miso or your favorite miso, more or less

Directions
- Wipe the kelp with a dry towel and soak it in water for 20 minutes in a medium size pot
- Slowly heat up the kelp and water mixture
- Just before it reaches boiling point, turn off the heat and take out the kelp
- Gently place tofu cubes and water to cover in a small pot and slowly heat up mixture and simmer, do not boil
- Keep the tofu warm until ready to use
- Add miso to dashi using strainer, do not boil, add more miso if needed
- Serve tofu in a soup bowl and pour miso soup over it and garnish with scallions on top
