Description
Piedmont filet is a very lean Italian beef. This dish is served with a sweet berry sauce and sauteed asparagus.

Each Piedmont Filet

Each Asparagus

As Needed Kosher Salt & Pepper

Table Spoon(s) Butter, unsalted

As Needed Berry Sauce

Directions
- Preheat oven to 350 degrees
- Melt 2 tablespoons of butter in a hot saute pan
- Place filet in pan
- Sear on one side for 3 minutes, flip then Sear other side for about 2 minutes
- Place in oven for 6 - 7 minutes for medium rare
- Blanch asparagus in boiling salted water for 2 minutes
- Add 1 tablespoon of butter to saute pan
- Add asparagus to pan and saute, coating in butter
- Remove from heat and set aside
- Plate up filet with asparagus
- Spoon Berry Sauce over filet
