Description

Piedmont filet is a very lean Italian beef. This dish is served with a sweet berry sauce and sauteed asparagus.


Ingredients

  • 1  Each Piedmont Filet
  • 1
  • 6  Each Asparagus
  • 2
  •  As Needed Kosher Salt & Pepper
  • 3
  • 3  Table Spoon(s) Butter, unsalted
  • 4
  •  As Needed Berry Sauce
  • 5

Directions

    1. Preheat oven to 350 degrees
    2. Melt 2 tablespoons of butter in a hot saute pan
    3. Place filet in pan
    4. Sear on one side for 3 minutes, flip then Sear other side for about 2 minutes
    5. Place in oven for 6 - 7 minutes for medium rare
    6. Blanch asparagus in boiling salted water for 2 minutes
    7. Add 1 tablespoon of butter to saute pan
    8. Add asparagus to pan and saute, coating in butter
    9. Remove from heat and set aside
    10. Plate up filet with asparagus
    11. Spoon Berry Sauce over filet

    Fresh Berry Sauce

    Ingredients

  • 1 Cup(s) Mixed Berries: blackerries, blueberries, raspberries
  • 1 Each Fresh Thyme Sprig
  • 1 Each Fresh Bay Leaf
  • 1 Table Spoon(s) Butter
  • 2 Table Spoon(s) Grape Must Reduction or Balsamic Reduction
  • Directions

    1. Melt butter in a pan over medium heat
    2. Add thyme sprig and bay leaf
    3. Add mixed berries
    4. Crush berries a bit in pan and saute for about 1 minute
    5. Add grape must reduction and bring to a boil
    6. Let reduce for about 1 minute
