Chef John Harkness makes a classic Halloween Pumpkin Chocolate Chip Muffin recipe. Your kids will love them!


Ingredients

  • 1/2  Cup(s) Light Brown Sugar
  • 1
  • 1/2  Cup(s) Granulated Sugar

  • 1 1/2  Cup(s) Pumpkin Puree
  • 3
  • 1 1/2  Cup(s) Flour
  • 4
  • 2  Each Eggs, beaten
  • 5
  • 1/4  Cup(s) Apple Sauce
  • 6
  • 1/2  Cup(s) Milk
  • 7
  • ½  Tea Spoon(s) Cinnamon
  • 8
  • ½  Tea Spoon(s) Nutmeg
  • 9
  • ½  Tea Spoon(s) Ginger
  • 10
  • 1  Tea Spoon(s) Baking Soda
  • 11
  • 1/4  Cup(s) Chocolate Chip
  • 12
  • ¾  Tea Spoon(s) Salt
  • 13
  • 1  Pinch All Spice
  • 14
  • 1  Pinch Ground Cloves

Directions

    1. Preheat oven to 350 degrees
    2. Mix all dry ingredients together in a large bowl until combined
    3. Push dry ingredients to sides of bowl exposing bottom middle of bowl
    4. Using a rubber spatula, add pumpkin puree to middle of bowl with milk, apple sauce and eggs
    5. Fold in chocolate chips
    6. Add batter into lightly greased muffin tins
    7. Bake in oven for 15 - 22 minutes
    8. Remove from oven and let cool
