This is a recipe for a delicious, tasty and crispy roast chicken. This recipe goes great with sauteed spinach and fingerling potatoes.


  • ½  Each Chicken
  • 1
  •  To Taste Salt
  • 2
  •  To Taste Pepper
  • 3
  • 1  Table Spoon(s) Butter
  • 4
  • 1  Each Thyme, spring
  • 5


    1. Marinate chicken in olive oil, shallot, thyme and garlic mixture overnight.
    2. Take chicken out of Marinate and season both sides.
    3. Heat saute pan and place chicken with skin side down for a few minutes or until skin side has a nice brown color.
    4. While sauteing add butter and thyme to the pan.
    5. Before placing the chicken in the oven baste the liquid over the chicken.
    6. Put chicken into 375 F for 15 minutes.
    7. Turn the chicken around and cook for 4 to 5 minutes.
    8. Place the chicken on paper towels to drain off excess oil.
    9. This dish goes great with sauteed spinach and fingerling potatoes.
    10. Serve and enjoy!





  • 1/4 Cup(s) Olive oil
  • 1 Each Thyme, spring
  • ½ Each Shallot
  • 2 Each Garlic, cloves
  • Directions

    Mix all ingredients together and marinate overnight.
