A compound butter with a lot of flavor! Also great for stuffing chicken, hamburgers, or rubbing on the skin of any meat.


  • 2  Each Sticks of Butter, softened
  • 1
  • 3  Table Spoon(s) Sage, finely chopped
  • 2
  • 2  Tea Spoon(s) Garlic, minced
  • 3
  • 2  Tea Spoon(s) Shallot, minced
  • 4
  • ½  Each Lemon, zested
  • 5
  • 3  Pinch Salt and Pepper
  • 6


    1. Place butter into stand mixer and mix, (you can also do this by hand if you do not have a stand mixer)
    2. After mixing is complete, scrape off the sides with a rubber spatula
    3. Add sage, garlic and shallots to butter
    4. Add lemon zest and mix again, ensure all ingredients are thoroughly incorporated
    5. Place butter on wax paper and roll into a log and refrigerate or freeze until needed
