Tuna Nicoise Salad

Description
This is a French inspired salad that makes a delightful summer dish. Salad-Nicoise is a traditional and very tasty French salad made with potatoes, green beans, eggs and tuna.
Ingredients
- 3 Each Grape Tomatoes
- 6 Each Nicoise Olives
- 1/8 Cup(s) Red Onion, thinly sliced
- 1 Each Red Potato, boiled
- 1 Each Egg, hard cooked
- 12 Each Haricot Vert (French green beans)
- 1 Each Anchovies (canned)
- 6 Ounce(s) Weight Seared Tuna (fresh is suggested)
- 2 Cup(s) Mesclun Greens
- ⅛ Tea Spoon(s) Fresh Basil, chopped
- 1/2 Cup(s) Dijon Vinaigrette
- As Needed Olive Oil
Directions
- Cook potatoes until fork-tender
- Refrigerate potatoes and hard-boiled egg until chilled
- Mix mesclun greens with Dijon vinaigrette
- Place mesclun greens in the middle of a serving platter
- Slice the egg and potatoes
- Ring the platter with egg, tomato, olives, potatoes and anchovies
- Arrange a mound of the french green beans on top of mesclun greens
- Place tuna on top of the salad
- Drizzle oil over the salad
- Garnish with basil and red onion slices
- 1 Table Spoon(s) Dijon Mustard
- 2 Table Spoon(s) White Wine Vinegar
- 4 Table Spoon(s) Olive Oil
- To Taste Kosher Salt & Pepper
- Whisk ingredients together until combined
- Season with salt and pepper to taste
