Description

This is a French inspired salad that makes a delightful summer dish. Salad-Nicoise is a traditional and very tasty French salad made with potatoes, green beans, eggs and tuna.


Ingredients

  • 3  Each Grape Tomatoes
  • 1
  • 6  Each Nicoise Olives
  • 2
  • 1/8  Cup(s) Red Onion, thinly sliced
  • 3
  • 1  Each Red Potato, boiled
  • 4
  • 1  Each Egg, hard cooked
  • 5
  • 12  Each Haricot Vert (French green beans)
  • 6
  • 1  Each Anchovies (canned)
  • 7
  • 6  Ounce(s) Weight Seared Tuna (fresh is suggested)

  • 2  Cup(s) Mesclun Greens
  • 9
  •  Tea Spoon(s) Fresh Basil, chopped
  • 10
  • 1/2  Cup(s) Dijon Vinaigrette

  •  As Needed Olive Oil

Directions

    1. Cook potatoes until fork-tender
    2. Refrigerate potatoes and hard-boiled egg until chilled
    3. Mix mesclun greens with Dijon vinaigrette
    4. Place mesclun greens in the middle of a serving platter
    5. Slice the egg and potatoes
    6. Ring the platter with egg, tomato, olives, potatoes and anchovies
    7. Arrange a mound of the french green beans on top of mesclun greens
    8. Place tuna on top of the salad
    9. Drizzle oil over the salad
    10. Garnish with basil and red onion slices

     

    Dijon Vinaigrette

    Ingredients

  • 1 Table Spoon(s) Dijon Mustard
  • 2 Table Spoon(s) White Wine Vinegar
  • 4 Table Spoon(s) Olive Oil
  • To Taste Kosher Salt & Pepper
  • Directions

    1. Whisk ingredients together until combined
    2. Season with salt and pepper to taste
