Description

Watch Chef Philip make this rich and creamy salted caramel ice cream. This ice-cream has a wonderful texture, so velvety!


Ingredients

  • 11 7/8  Ounce(s) Weight Sugar
  • 1
  • 3/8  Cup(s) Water
  • 2
  • 15 1/4  Ounce(s) Weight Heavy Cream
  • 3
  • 15 1/4  Ounce(s) Weight Milk
  • 4
  • 7 1/8  Ounce(s) Weight Egg Yolks
  • 5
  • 1/3  Ounce(s) Weight Salt
  • 6
  • 50  Tea Spoon(s) Sugar
  • 7

Directions

     

    1. Melt the sugar in water to make the caramel.
    2. Once the sugar begins to darken and turn amber-colored it is ready.
    3. In another pot, heat milk and cream together and bring to boil.
    4. Slowly add the milk/cream mixture to the caramel and mix well.
    5. Add salt.
    6. In a separate mixing bowl whisk egg yolks and sugar together.
    7. Next add egg yolk mixture to the cream mixture and heat for 2 minutes.
    8. Careful not to bring to boil.
    9. Once mixture has thickened it is ready.
    10. Freeze in an ice cream machine according to manufacturer's directions.
    11. Serve and Enjoy!
