Smoked Herring Rollatini with Lobster tar tar

Watch chef Fridleifur put together this creative appetizer. He combines different flavors and textures in his smoked herring rollatini with Lobster tar tar.


  •  Each Herring fillet

  • 1  Table Spoon(s) Cream cheese
  • 2
  • 1  Table Spoon(s) Dill, chopped
  • 3
  • ¼  Tea Spoon(s) Pureed Horseradish
  • 4


    1. Start with cleaning off the skin and extra fat of the herring fillets.
    2. Place fillet between plastic films and press down with a wide knife or a flat tool.
    3. In a bowl mix together cream cheese, dill and horseradish to make the filling.
    4. Move the herring fillet to a new plastic film.
    5. Now spread the cream cheese filling on top of the herring fillet.
    6. Wrap the plastic film around the herring fillet and roll up tightly.
    7. Cool for 30 minutes.
    8. Cut the plastic film off on one side and slide the rollatini out.
    9. Cut in half.
    10. Spread Demerara sugar on top of rollatini and use a torch to caramelize.












    Lobster Tar Tar


  • 3 Each Langoustine tails
  • Pinch Pepper
  • Pinch Salt
  • 1 Tea Spoon(s) Olive oil
  • 1 Table Spoon(s) Bread, dried and crumbled
  • Pinch Parsley, chopped
  • Pinch Lemon zest
  • Directions

    1. Cut langoustine tails into cubes.
    2. Mix all ingredients together.
    3. For a beautiful plating effect use a square mold for the lobster tar tar.
    4. Serve with smoked herring rollatini.
    5. Enjoy!
