Veal Spiedini

Description
Veal Spiedini - Veal rolls stuffed with cheese, parsley, garlic, bay leaves and bread crumbs. Seared and cooked till tender.
Ingredients
- 4 Each Veal Cutlets, pounded thin
- ½ Each Onion, thinly sliced
- 4 Each Bay Leaves
- As Needed Salt & Pepper
Directions
- Preheat oven to 350 degrees
- Season pounded veal cutlets on both sides with salt and pepper
- Place 1/4 of bread crumb mix on each cutlet and spread evenly
- Place onion slices and bay leaves on each cutlet
- Roll each cutlet tightly, skewer them on bamboo skewer then place on grill
- grill each side for 2 minutes
- Finish the cutlets in the oven for 4 to 5 minutes
- Enjoy
- 1/4 Cup(s) Bread Crumbs
- 1 ½ Table Spoon(s) Olive Oil
- 1 Table Spoon(s) Garlic
- Pinch Parsley
- 1 Table Spoon(s) Parmesan Cheese, grated
- In a mixing bowl, mix together bread crumbs, garlic, parsley and cheese
- Add enough oil moisten the bread crumb mix
- Toss well
