Description

A combination of a variety of vegetables cooked with a blend of Indian spices, this mixed vegetable recipe is easy and quick to prepare.


Ingredients

  • ½  Each Sweet Potatoes, medium sized
  • 1
  • ½  Each Turnips, medium sized
  • 2
  • ½  Each Zucchini, medium sized
  • 3
  • 4  Tea Spoon(s) Mushrooms, medium sized
  • 4
  • 1/2  Cup(s) Peas
  • 5
  •  Each Potatoes, medium sized
  • 6
  • 1  Each Tomato, chopped
  • 7
  •  Pinch Turmeric Powder
  • 8
  •  Pinch Chili Powder
  • 9
  •  To Taste Curry Leaves (optional)
  • 10
  •  Pinch Cumin seeds
  • 11
  • 1  Tea Spoon(s) Mustard oil
  • 12
  • ½  To Taste Salt

  • 1/2  Cup(s) Water

Directions

    1. Chop and steam sweet potato, turnips, zucchini, peas and potato
    2. Saute raw mushrooms on a hot frying pan with a pinch of turmeric powder, chili powder and cumin powder
    3. Add the rest of vegetables to the mushrooms and season with salt
    4. Add water and cook covered for 2 to 3 minutues
    5. Add tomatoes and simmer again covered for about 7 minutes
    6. Serve with either rice or naan
