  • 1  As Needed Boiling salted water
  • 2


    1. Remove Sweetbread from package. Place in salted boiling water for 5 minutes
    2. Allow to set but stay raw in the middle. Shock immediately in an Ice bath
    3. Dry and cut off any membrane you can find.
    4. Cut into medallions 3/4 of an inch thick and prepare how you wish
