Description

Acini de Pepe is a small pasta found in any supermarket. Saute it with artichokes, baby spinach, butter, oil and chicken stock then garnish with parmesan cheese.


Ingredients

  • 1  Quart(s) Acini de Pepe Pasta, cooked al dente
  • 1
  • 1  Table Spoon(s) Olive Oil
  • 2
  • 1  Table Spoon(s) Shallot, minced
  • 3
  • ¾  Table Spoon(s) Garlic, minced
  • 4
  •  To Taste Salt & Pepper
  • 5
  • 3/4  Cup(s) Chicken Stock
  • 6
  • 8  Each Artichokes, quartered
  • 7
  • 2  Table Spoon(s) Flat Leaf Parsley, finely chopped
  • 8
  • 1  Table Spoon(s) Thyme
  • 9
  • ½  Tea Spoon(s) Rosemary, finely chopped
  • 10
  • 2  Cup(s) Baby Spinach
  • 11
  • 1/4  Cup(s) Parmesan Cheese, grated

Directions

    1. In a pan on medium heat, add olive oil.
    2. Once oil is hot, add shallot and sweat out.
    3. Add garlic and season with salt and pepper.
    4. Ladle in 1/4 cup chicken stock.
    5. Add pasta and toss to coat.
    6. Cook for 2 - 3 minutes.
    7. Add artichokes, parsley, thyme and rosemary.
    8. Add another 1/4 cup chicken stock.
    9. Fold in baby spinach and let wilt.
    10. Add in Parmesan cheese then taste to season with more Parmesan cheeseĀ if necessary.
    11. Add another 1/4 cup chicken stock.
    12. Stir to incorporate.
    13. Plate up and drizzle with extra virgin olive oil.
