Description
Acini de Pepe is a small pasta found in any supermarket. Saute it with artichokes, baby spinach, butter, oil and chicken stock then garnish with parmesan cheese.

Directions
- In a pan on medium heat, add olive oil.
- Once oil is hot, add shallot and sweat out.
- Add garlic and season with salt and pepper.
- Ladle in 1/4 cup chicken stock.
- Add pasta and toss to coat.
- Cook for 2 - 3 minutes.
- Add artichokes, parsley, thyme and rosemary.
- Add another 1/4 cup chicken stock.
- Fold in baby spinach and let wilt.
- Add in Parmesan cheese then taste to season with more Parmesan cheeseĀ if necessary.
- Add another 1/4 cup chicken stock.
- Stir to incorporate.
- Plate up and drizzle with extra virgin olive oil.
