Description
Ackee and SaltFish recipe is Jamaica's staple dish. Ackee is a fruit and a major ingredient in Caribbean cuisine. You can find canned Ackee at your local supermarket. It is important to boil your saltfish twice to get the salt out.

Directions
- In a large pot of boiling water, add saltfish and boil for 30 minutes
- Strain and rinse then boil fish again for 30 minutes
- Strain again and let fish cool
- In a hot saute pan, add oil
- Add onions and tomatoes and saute for about 2 minutes
- Add SaltFish, breaking up into small pieces with a large spoon
- Let cook for 10 minutes
- Add Ackee and simmer for 5-10 minutes, covered
- Season with salt and pepper
