Description

A wonderful side dish with Almonds, Brandy, Cranberries. A side for any occasion.


Ingredients

  • 2  Each Green Medium Zucchini
  • 1
  • 2  Table Spoon(s) Dried Cranberries
  • 2
  • 2  Table Spoon(s) Almonds
  • 3
  • 1  Table Spoon(s) Minced Garlic
  • 4
  • 1  Table Spoon(s) Olive oil
  • 5
  • 1/4  Cup(s) Brandy
  • 6
  •  To Taste Salt
  • 7
  •  To Taste Pepper
  • 8

Directions

    1. Slice Zucchini into 1/4 inch slices.
    2. Rehydrate cranberries in Brandy.
    3. Put olive oil in Sautee pan, Smoke point is 430 degrees.
    4. Place zucchini in sautee pan, toss for about 2 minutes, add garlic, add almonds.
    5. Add Brandy with cranberries, burn off alcohol.
    6. Add butter and toss for another minute.
    7. Serve on a platter or as a side.
