An upside-down apple tart with caramelized apples in butter and sugar then served with a beautiful rose simple syrup and homemade whipped cream. Truly wow your guests by plating the tatin the same way Carlo does in this video.


  • 7  Each Empire Apples
  • 1
  • 2  Table Spoon(s) Butter
  • 2
  • 1  Cup(s) Sugar
  • 3
  • ½  Tea Spoon(s) Cinnamon
  • 4
  • 1  Each Puff Pastry Sheet, 10" (defrosted if frozen)

  •  As Needed Rose Simple Syrup
  • 6
  •  As Needed Homemade Whipped Cream

    1. Peel and core apples, reserve the peel and cores for the simple syrup
    2. Slice apples into desired size
    3. Preheat oven to 350 degrees
    4. Heat a nonstick skillet on medium heat
    5. Add butter and let melt
    6. Once butter is melted, add apples
    7. Add sugar and cinnamon and toss to combine
    8. Let apples caramelize in sugar and butter
    9. Once apples are caramelized, place dough right on top of apples in skillet
    10. With a knife, make a sliver in the middle of the dough
    11. Bake in the oven for 10 - 15 minutes until pastry is golden brown
    12. Remove from oven and let cool for 1 hour
    13. Once tart has cooled, place skillet back onto a medium low flame and heat quickly until tart has loosened from pan
    14. Place a plate over the skillet and flip skillet over to remove tart
    15. Slice tart into 8 pieces
    16. Serve with rose simple syrup and whipped cream

    Homemade Whipped Cream


  • 1 Cup(s) Heavy Cream
  • 1 Table Spoon(s) Sugar
  • 1 Each Vanilla Bean
  • Directions

    1. In a cold stainless steel bowl, add heavy cream and sugar
    2. Slice vanilla bean lengthwise and scrape out vanilla pods
    3. Add pods to bowl
    4. Whisk ingredients together until thick
    5. This will be easier if using a hand held mixer or mixing stand

    Rose Simple Syrup


  • As Needed Cores from Apples, chopped
  • As Needed Peeled Skin from Apples
  • 1 Cup(s) Water
  • 1 Cup(s) Sugar
  • 1 Each Vanilla Bean
  • Directions

    1. In a sauce pot on medium high flame, add water and sugar and stir together
    2. Add apple cores and peels
    3. Slice vanilla bean lengthwise and scrape out vanilla pods
    4. Add pods to pot
    5. Bring to a simmer and reduce until rose color
    6. Strain and reserve all liquid
