Description

This Asian inspired dish is all about the fresh Tuna pan seared to a perfect medium rare. It is served with a Ponzu Wasabi Dipping Sauce.


Ingredients

  • 14  Ounce(s) Weight Fresh Tuna Loin, cut in 2 pieces

  •  As Needed Ponzu Wasabi Dip

  •  As Needed Butter or Margarine

  • 2  Table Spoon(s) Black and White Sesame Seeds
  • 4
  •  As Needed Scallions, garnish
  • 5
  • 1  As Needed Hoisin Sauce, garnish (optional)

  • 2  Tea Spoon(s) Chinese 5 Spice Powder
  • 7
  • 4  Each Wonton Skins
  • 8
  • 1  Tea Spoon(s) Egg Whites
  • 9
  •  As Needed Oil (for frying wontons)

Directions

    1. Brush wontons with egg whites then sprinkle with sesame seeds
    2. Deep fry in oil until golden and crunchy
    3. Dress the plate with dip bowl, rim the bowl with the sesame seeds
    4. Paint the plate with the hoisin, arrange the scallion slices and paint the plate with butter to adhere the sesame seeds
    5. Season tuna with 5 spice
    6. Sear on all sides on high heat
    7. When fully seared, place on plate and top with sesame seeds
    8. Garnish plate with fried wontons
    9. Serve with Ponzo Wasabi Dip

    Ponzu Wasabi Dip

    Ingredients

  • 2 Cup(s) Soy Sauce
  • 1/4 Cup(s) Mirin
  • 1/4 Cup(s) Lime Juice, fresh
  • 1 Table Spoon(s) Sugar
  • 1 Table Spoon(s) Horseradish, prepared
  • 1 Table Spoon(s) Fresh Ginger, grated
  • 2 Table Spoon(s) Wasabi Powder
  • Directions

    1. Mix soy, mirin, lime juice, ginger, sugar and horseradish
    2. Take a bit of that and dilute the wasabi powder, mix all together
