Description

This Dish is a classic. Tenderloin of Beef in a Puff Pastry shell with Mushrooms, Pate, and Spinach. A must make a Holliday time.


Ingredients

  • 6  Ounce(s) Weight Filet of Beef
  • 1
  •  As Needed Kosher Salt & Cracked Black Pepper

  • 3  Table Spoon(s) Olive Oil
  • 3
  • 2  Each Fresh Rosemary Sprigs
  • 4
  • 3  Each Fresh Thyme Sprigs
  • 5
  • 4  Each Garlic Cloves
  • 6
  • 2  Table Spoon(s) Butter
  • 7
  • 1 1/2  Pound(s) Assorted Mushrooms (Shiitake, Portobello, Cremini)

  • 2  Cup(s) Madeira Wine
  • 9
  • 1  Each Frozen Puff Pastry Sheet
  • 10
  • 1/2  Pound(s) Spinach, blanched
  • 11
  • 2  Table Spoon(s) Mushroom Duxelle
  • 12
  • 1  Table Spoon(s) Egg Wash

  • 4  Each Button Mushrooms, sliced in half lengthwise

Directions

    1. Preheat oven to 400 degrees F
    2. Season both sides of filet with salt and pepper
    3. Heat 2 tablespoons of olive oil in a saute pan on high heat
    4. Once oil is hot, turn heat down to medium high and add filet
    5. Add rosemary, thyme and garlic to flavor filet
    6. Add butter, moving around in pan and pouring over steak to baste
    7. Stir herbs and garlic around the pan to marry the flavor
    8. Sear steak for 2 minutes on each side for 2 minutes to caramelize
    9. Remove filet from pan and let rest
    10. Mushroom Duxelle:
    11. In a pan, add mushrooms, Madeira wine, salt and pepper and cook down on low heat for 1 - 2 hours
    12. Lay puff pastry on a flat surface and top with half of spinach, 1 tablespoon of Mushroom Duxelle then the filet
    13. Stretch each side of pastry and bring to the top center of filet to enclose and wrap
    14. Grease a cookie sheet with butter or oil
    15. Brush egg wash on top and sides of pastry and Season with salt and pepper
    16. Bake beef wellington in oven for 12 - 15 minutes for medium rare
    17. Remove from oven and let rest
    18. Heat a pan with 1 tablespoon of olive oil
    19. Sear mushrooms cut side down in pan for about 5 minutes or until brown
    20. Flip mushrooms and cook on other side until brown
    21. Cut beef wellington in half
    22. Plate up with demi glace spooned in center of plate
    23. Place filet with center side up and garnish with seared button mushrooms
