This is a savory take on a Sweet French Classic. Roasted Beets thinly slice Arranged in a beautiful circular motion covered in an Herb and Citrus goat cheese mixture then topped with puff pastry and baked until golden brown. Once out of the oven flip this delectable Tart so the pastry is on the bottom and serve. This is always a unique crowd pleaser.


  • 2  Each Beets, medium washed

  • 2  Table Spoon(s) Olive Oil

  • 1  To Taste Salt and Pepper

  • ½  Tea Spoon(s) Thyme, fresh chopped
  • 4
  • 8  Ounce(s) Weight Goat Cheese
  • 5
  • ½  Tea Spoon(s) Lime Zest
  • 6
  • ½  Tea Spoon(s) Lemon Zest
  • 7
  • ½  Tea Spoon(s) Cilantro, chopped
  • 8
  • ½  Tea Spoon(s) Parsley, chopped
  • 9
  • ½  Tea Spoon(s) Chives, chopped

  • ¼  Tea Spoon(s) Marjoram, chopped

  • 2  Each Puff Pastry Disks, 6" diameter each

  • 1  As Needed Kosher Salt

    1. Dress beets with olive oil and season with a bit of salt, pepper and fresh thyme
    2. Cover in foil and place on a bed of kosher salt
    3. Roast at 425 degrees for 90 minutes or until just soft to the touch
    4. Let cool at room temperature unwrap and peel with a clean towel
    5. Slice with a Mandoline or a sharp knife just under 1/4" thick
    6. Soften goat cheese in a microwave for 10 seconds then fold the soft herbs, lemon and lime zest in 
    7. season with salt and pepper to taste
    8. Apply a nonstick spray to tart pans and lay out the beet slices in a decorative circular pattern
    9. Spread the goat cheese mixture evenly on top of the beets about 1/3" thick (Can be more or less depending on your desired taste)
    10. Place the puff pastry disk on top and tap it down lightly, brush with olive oil
    11. Place in oven for 15 minutes at 400 degrees or until pastry is golden brown, check every 5 minutes
    12. Release tart from pan with back of a knife and flip onto the serving plate or platter
    13. Garnish with roasted golden beets and candied pecans if desired
    14. Puree roasted beet ends in a blender with oil to Garnish your tart (optional)
