Description

This delicious salsa can be used in a salad, served with chips or as a side dish to any Southwestern or Mexican dish. Corn and Black Bean Salsa is populate at any party.


Ingredients

  • 7  Each Ears of Corn, roasted or grilled
  • 1
  • 1  Table Spoon(s) Fresh Cilantro, minced

  • 2  Tea Spoon(s) Jalapeno, seeded, minced
  • 3
  • 3  Table Spoon(s) Yellow Pepper, finely diced
  • 4
  • 3  Table Spoon(s) Red Pepper, finely diced
  • 5
  • 4  Table Spoon(s) Black Beans
  • 6
  • 3  Table Spoon(s) Tomatoes, finely diced

  • 2  Table Spoon(s) Red Onion, finely diced

  • 1  Table Spoon(s) Fresh Lime Juice

  • 2  Table Spoon(s) Olive Oil

Directions

    1. Remove kernels from corn and add to a mixing bowl
    2. Add all other ingredients and mix until combined
    3. Taste and season with salt and pepper
    4. Enjoy!
