Description

Radiatori pasta tossed with crispy bacon, arugula, heirloom cherry tomatoes and finished with grated Parmesan cheese.


Ingredients

  • 1  Pound(s) Radiatore Pasta
  • 1
  • 1/2  Pound(s) Bacon, cut into 3/4" pieces
  • 2
  • 2  Cup(s) Heirloom Cherry Tomatoes
  • 3
  • 3  Cup(s) Arugula, cleaned
  • 4
  •  Pinch Dried Rosemary, Dried Sage, Sea Salt
  • 5
  • 1  Cup(s) Pasta Water
  • 6
  • 4  Table Spoon(s) Butter
  • 7
  • 1  Cup(s) Grated Parmesan Cheese
  • 8
  • 1  Table Spoon(s) Olive Oil
  • 9
  • 1  Each Scallion, chopped

Directions

    1. Boil water for pasta and season with salt
    2. Saute bacon in pan until crisp
    3. Add heirloom tomatoes half's cook for about 2 minutes then turn off heat
    4. Add arugula and mix until slightly wilted
    5. Cook pasta until al dente reserving 1 cup of pasta water
    6. Strain pasta and toss into Saute pan with tomato arugula and bacon
    7. Fold in and add pasta water butter and Parmesan cheese
    8. Incorporate together
    9. Plate up drizzle pasta with olive oil and garnish with scallions
