Directions
- Boil water for pasta and season with salt
- Saute bacon in pan until crisp
- Add heirloom tomatoes half's cook for about 2 minutes then turn off heat
- Add arugula and mix until slightly wilted
- Cook pasta until al dente reserving 1 cup of pasta water
- Strain pasta and toss into Saute pan with tomato arugula and bacon
- Fold in and add pasta water butter and Parmesan cheese
- Incorporate together
- Plate up drizzle pasta with olive oil and garnish with scallions
