Bourbon Mashed Sweet Potatoes

Description
Seasoned sweet potatoes are slow roasted in the oven then mashed with a heavy cream bourbon mixture. A great twist on the traditional mashed sweet potatoes!
Ingredients
- 3 Each Sweet Potatoes, washed & dried
- 1 Table Spoon(s) Kosher Salt
- 3 Table Spoon(s) Olive Oil
- 1 Table Spoon(s) Coarse Ground Black Pepper
- 4 Fluid ounce(s) Bourbon
- 2 Fluid ounce(s) Heavy Cream
- 3 Ounce(s) Weight Butter
- As Needed Salt & Pepper
Directions
- Preheat oven to 450 degrees
- Season each sweet potato with olive oil, 1 tablespoon of salt and coarse ground black pepper
- Roast in oven for 1 hour - 1 hour 30 minutes, depending on size of potatoes
- Remove from oven, insert a knife into a potato, if it's soft then they're done
- Let potatoes cool
- In a hot pan, add Bourbon off of the heat
- Place pan back on heat, it will flame up
- Let Bourbon cook until flames have dissipated
- Add heavy cream and butter to pan
- Once butter is melted, remove pan from heat
- Cut off end and the flat part of the bottom of each sweet potato
- Squeeze out the flesh and place in a pot
- Add bourbon cream mix to potatoes
- Mash up and Season to taste if necessary with salt and pepper
- Add more Bourbon if needed
