Bourbon Mashed Sweet Potatoes

Description

Seasoned sweet potatoes are slow roasted in the oven then mashed with a heavy cream bourbon mixture. A great twist on the traditional mashed sweet potatoes!


Ingredients

  • 3  Each Sweet Potatoes, washed & dried
  • 1
  • 1  Table Spoon(s) Kosher Salt
  • 2
  • 3  Table Spoon(s) Olive Oil
  • 3
  • 1  Table Spoon(s) Coarse Ground Black Pepper
  • 4
  • 4  Fluid ounce(s) Bourbon
  • 5
  • 2  Fluid ounce(s) Heavy Cream
  • 6
  • 3  Ounce(s) Weight Butter
  • 7
  •  As Needed Salt & Pepper
  • 8

Directions

    1. Preheat oven to 450 degrees
    2. Season each sweet potato with olive oil, 1 tablespoon of salt and coarse ground black pepper
    3. Roast in oven for 1 hour - 1 hour 30 minutes, depending on size of potatoes
    4. Remove from oven, insert a knife into a potato, if it's soft then they're done
    5. Let potatoes cool
    6. In a hot pan, add Bourbon off of the heat
    7. Place pan back on heat, it will flame up
    8. Let Bourbon cook until flames have dissipated
    9. Add heavy cream and butter to pan
    10. Once butter is melted, remove pan from heat
    11. Cut off end and the flat part of the bottom of each sweet potato
    12. Squeeze out the flesh and place in a pot
    13. Add bourbon cream mix to potatoes
    14. Mash up and Season to taste if necessary with salt and pepper
    15. Add more Bourbon if needed
