Description

Tender braised Endive with Sweet Apples and Dried Fruit.


Ingredients

  • 1  Each Apple
  • 1
  • 2  Each Endive
  • 2
  • 3  Table Spoon(s) Raisins, or any dried fruit
  • 3
  • 1  As Needed Salt
  • 4
  • 1  As Needed Pepper
  • 5
  • 2  Table Spoon(s) Apple Cider Vinegar
  • 6
  • 1  Table Spoon(s) Extra Virgin Olive Oil
  • 7
  • 1  Tea Spoon(s) Butter
  • 8
  • 1/2  Cup(s) Apple Cider
  • 9

Directions

    1. Trim endive and cut in half
    2. Season with salt and pepper
    3. Heat oil and butter in pan and sear flat side of endive
    4. Slice and add apples and dried fruit
    5. Deglaze with the vinegar, let reduce then add the cider
    6. When the cider comes to a boil, cover and place in oven for 15 minutes
    7. Remove from oven and serve
