Description

A perfect dressing for chicken, fish or salad. Charred tomatoes pureed with olive oil, red wine vinegar, roasted garlic and basil.


Ingredients

  • 5  Each Tomatoes, cored, sliced in half
  • 1
  •  As Needed Salt & Pepper
  • 2
  • 4  Table Spoon(s) Extra Virgin Olive Oil
  • 3
  • 6  Each Garlic Cloves, roasted or raw
  • 4
  • 4  Each Basil Leaves, chiffonade
  • 5
  • 4  Table Spoon(s) Red Wine Vinegar
  • 6

Directions

    1. Preheat grill
    2. Season tomatoes with salt and pepper and drizzle with 1 tablespoon of olive oil
    3. grill tomatoes cut side down until charred, 2 minutes
    4. Flip and grill the other side for 2 minutes
    5. Flip again and grill the cut side for another 30 seconds
    6. Remove from grill and let cool
    7. Place in a blender with garlic, basil and red wine vinegar
    8. Puree
    9. Slowly add in olive oil while pureeing
    10. Season to taste with salt and pepper
