A perfect dressing for chicken, fish or salad. Charred tomatoes pureed with olive oil, red wine vinegar, roasted garlic and basil.

Each Tomatoes, cored, sliced in half

Each Garlic Cloves, roasted or raw

Directions
- Preheat grill
- Season tomatoes with salt and pepper and drizzle with 1 tablespoon of olive oil
- grill tomatoes cut side down until charred, 2 minutes
- Flip and grill the other side for 2 minutes
- Flip again and grill the cut side for another 30 seconds
- Remove from grill and let cool
- Place in a blender with garlic, basil and red wine vinegar
- Puree
- Slowly add in olive oil while pureeing
- Season to taste with salt and pepper
