Chicken Cilantro Burgers

Description
These Light and Easy Chicken Burgers are packed with Southwestern flavor. Do them on the grill or in a pan, your friends will love them.
Ingredients
- 1 Cup(s) Red Onion, small dice
- 1 Cup(s) Cilantro, rough chop
- 2 Each Eggs
- 1 1/2 Pound(s) Ground Chicken Thigh Meat
- 1 Tea Spoon(s) Salt
- ½ Tea Spoon(s) Pepper
- 3/4 Cup(s) Cracker Crumbs
- As Needed Red Leaf Lettuce (optional)
- As Needed Guacamole (optional)
- 6 Each Brioche Buns (if available)
Directions
- Add onions, cilantro, eggs, crackers, salt, pepper and chicken to a bowl and mix well
- Form into desired size and grill or sear in a pan
- grill each side for 3-4 minutes or until golden brown
- Finish in a 350 degree oven for 8 minutes or until burgers are cooked through
- Top with anything you desire and serve on a bun or on top of a salad

Great healthy recipe!
I was looking for a meal my kids would enjoy that was a bit healthy, and Chef Johnathan's Cilantro burgers were perfect. My kids loved them!
