Chicken Forestiere

Description
Chicken Forestiere is a deep, hearty chicken dish in a brown sauce with tomatoes, onions and mushrooms. This recipe calls for Airline chicken breasts but you can easily use regular chicken breasts. If you're using regular breasts, you will not have to finish the chicken off in the oven.
Ingredients
- 2 Each Airline Chicken Breasts, skin on, wing bone in
- 2 Table Spoon(s) Oil
- 1/4 Cup(s) White Wine
- 1/4 Cup(s) Mushrooms, sliced
- 1/4 Cup(s) Onion, diced
- 1/2 Cup(s) Tomatoes, diced
- 1 Cup(s) Demi Glace
- To Taste Salt & Pepper
- 2/3 Cup(s) Flour, all purpose
Directions
- Preheat oven to 350 degrees
- Heat upĀ saute pan and add oil
- Dredge chicken in flour then add chicken to pan
- saute skin side down until caramelized and brown
- Filp and sear other side until golden brown
- Remove chicken from pan and add wine to deglaze
- Add mushrooms onions and tomatoes
- Let cook for a few minutes then season with salt and pepper
- Ladle in demi glace
- Place chicken back into pan
- Cook in oven for 12 minutes
- Plate chicken then ladle sauce over it
